<strong>Golden View<\/strong> \u00e8 <strong>Tommaso Grasso<\/strong> un imprenditore giovane che possiede il ristorante da quasi vent\u2019anni. Si tratta di una personalit\u00e0 poliedrica, che oltre all\u2019interesse per la cucina, \u00e8 promotore di concerti di <strong>musica jazz <\/strong>e <strong>mostre d\u2019arte<\/strong>, nonch\u00e9 <strong>appassionato di vini<\/strong>. Q<\/p>\n<p>uest\u2019ultimo per l\u2019occasione illustra con grande affabilit\u00e0 un\u2019ampia gamma e di <strong>salu<\/strong><\/p>\n<p><strong>mi e prosciutti tagliati a mano <\/strong>e <strong>formaggi italiani<\/strong> e <strong>internazionali<\/strong> scelti meticolosamente per offrire solo prodotti veramente territoriali e altissima qualit\u00e0.<\/p>\n<p><\/p>\n<p><\/p>\n<p>Il laboratorio di arte bianca mette a disposizione per il ristorante pane e focacce dal carattere unico, ottenuti da mix di farine biologiche e lunghe lievitazioni, realizzati esclusivamente con lievito madre.<\/p>\n<p><\/p>\n<p><\/p>\n<p><\/p>\n<p><\/p>\n<p>Il <strong>men\u00f9 del Golden View \u00e8 <\/strong>curato dallo <strong>Chef Paolo Secci<\/strong>, che si destreggia abilmente sia con originali piatti di terra che di mare, dai sapori freschi e genuini e ottenuti con materie prime selezionati con criteri etici. La cucina dello Chef Paolo Secci d\u00e0 vita a piatti sinceri e appassionanti che coniugano magistralmente <strong>territorialit\u00e0<\/strong> e <strong>semplicit\u00e0<\/strong> con <strong>inconsueta eleganza<\/strong>.<\/p>\n<p><\/p>\n<p><\/p>\n<p>Tra i protagonisti del <strong>men\u00f9 del Golden View<\/strong> troviamo prodotti ittici siciliani e mediterranei freschi di prima qualit\u00e0 che si possono anche ammirare dalle vetrate esterne del <strong>Golden View<\/strong>. Tra questi troviamo i famosi gamberi rossi di Mazara e il gambero viola, selezioni di ostriche pregiate, scampi, mazzancolle, tonno rosso, ricciola, salmone, storione.<\/p>\n<p><\/p>\n<p><\/p>\n<p>Tra i primi consigliati del <strong>Men\u00f9 del Golden View <\/strong>troviamo i delicati <strong>Gnocchetti di patate alla nipitella fatti in casa su spuma di porcini e porcini tostati<\/strong>, molto interessanti anche <strong>Linguine del pastificio Mancini alle vongole veraci, zucchine fiorentine e caviale Calvisius<\/strong>, oppure le<strong> Pappardelle allo scoltellato di manzo brado della Maremma e melanzane al funghetto<\/strong>.<\/p>\n<p><\/p>\n<p><\/p>\n<p>Tra i secondi si pu\u00f2 lasciarsi deliziare dalle <strong>bistecche di razza Maremmana e Fassona<\/strong>, passando dal <strong>piccione d\u2019Anjou\u2019 al\u00a0 fegato di vitella<\/strong>, oppure il delizioso\u00a0 <strong>Storione in crosta con asparagi saltati e salsa di soya al<\/strong> <strong>ginger<\/strong>. Da scoprire assolutamente anche il <strong>Pesce scelto direttamente al banco<\/strong> fatto al sale o all\u2019acqua pazza.<\/p>\n<p><\/p>\n<p><\/p>\n<h2><strong>CARTA DEI VINI DEL GOLDEN VIEW<\/strong><\/h2>\n<p><\/p>\n<p><\/p>\n<p>La cantina, la carta dei vini e gli eventi interni ed esterni del <strong>Golden View<\/strong> sono curati dal \u201csommelier narratore\u201d <strong>Paolo Miano<\/strong>.\u00a0La proposta dei vini da lui realizzata \u00e8 sicuramente una delle pi\u00f9 interessanti di Firenze, e contempla oltre <strong>8000 etichette<\/strong>, custodite nella <strong>cantina storica del 1400\u2019 in Via dei Bardi <\/strong>e in una <strong>cantina refrigerata visibile in vetrina<\/strong> in grado di gestire temperature e umidit\u00e0 specifiche.<\/p>\n<p><\/p>\n<p><\/p>\n<p>Tra le etichette del <strong>Golden View <\/strong>si possono contare sia innumerevoli <strong>annate storiche<\/strong> di molte tra le pi\u00f9 importanti icone dell\u2019<strong>enologia toscana <\/strong>e <strong>italiana<\/strong>, ma anche <strong>vini artigianali<\/strong> di piccole aziende, selezionate personalmente con grandissima cura da <strong>Paolo Miano <\/strong>per accompagnare il men\u00f9 del <strong>Golden View<\/strong>.<\/p>\n<p><\/p>\n<p><\/p>\n<p>Tra le etichette di grande interesse tra i <strong>vini del Golden View<\/strong> troviamo sia una ampia selezione di annate dei grandi <strong>\u201cSuper Tuscans<\/strong>\u201d (Sassicaia, Ornellaia, Solaia, Tignanello) insieme a quelle dei \u201c<strong>Brunelli<\/strong>\u201d (Biondi Santi, Soldera, Poggio di Sotto), ma anche originali proposte da zone meno note come <strong>Sauvignon Blanc della Nuova Zelanda<\/strong> e <strong>Vermentino della Corsica<\/strong>.<\/p>\n<p><\/p>\n<p><\/p>\n<p>Scelte molto convincenti quelle di <strong>Paolo Miano<\/strong>, che riescono a soddisfare sia i consumatori in cerca degli immancabili <strong>vini classici<\/strong> sia quelli che ricercano un approccio <strong>glocal<\/strong>: sempre pi\u00f9 curiosi di scoprire <strong>vini <\/strong>e<strong> vitigni autoctoni <\/strong>che siano autentiche <strong>espressioni territoriali<\/strong>.<\/p>\n<p><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<\/div>\n\t\t","protected":false},"excerpt":{"rendered":"<p>Il Golden View \u00e8 uno storico locale con vista su Ponte Vecchio.che propone raffinati piatti di pesce e ispirati alla tradizione toscana.<\/p>\n","protected":false},"author":5,"featured_media":2870,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"_acf_changed":false,"footnotes":""},"categories":[677,675,676,688,672,674],"tags":[],"class_list":["post-1027","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-centro-storico","category-mediterranea","category-oltrarno","category-oltre-50-e","category-pesce","category-cucina-toscana"],"acf":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v26.6 -
