classici della tradizione gastronomica italiana. Il locale, situato in una via pedonale, vanta anche un accogliente <strong>dehor<\/strong>, ideale per gustare i piatti all&#8217;aperto, e un arredamento che richiama le osterie di una volta, semplice ma curato.<\/p>\n<p>Il piatto forte, come suggerisce il nome, \u00e8 la <strong>cacio e pepe<\/strong>, preparata con maestria utilizzando solo ingredienti di alta qualit\u00e0: <strong>pecorino romano DOP<\/strong> e <strong>pepe nero macinato fresco<\/strong>, che creano una crema vellutata che avvolge la pasta al dente. Fra i primi, spiccano i <strong>ravioli artigianali di spinaci<\/strong> con crema di <strong>pecorino<\/strong>, noci e <strong>tartufo<\/strong>, ma anche il <strong>risotto al Chianti<\/strong>, che porta con s\u00e9 il sapore intenso della pancetta, cipolla e vino rosso, e i <strong>pici artigianali cacio e pepe<\/strong>, piatto della tradizione gastronomica romana.<\/p>\n<p>Passando ai secondi, la carne alla brace \u00e8 protagonista: da non perdere l&#8217;<strong>abbacchio al forno con patate<\/strong>, la <strong>coda alla vaccinara<\/strong>, piatti che raccontano storie di sapori antichi, o il <strong>filetto ai funghi porcini<\/strong>, arricchito da <strong>tartufo<\/strong>, <strong>pecorino<\/strong> e un delicato tocco di <strong>vin santo<\/strong>.
