The first courses menu includes specialties such as Gragnano calamarata<\/strong> saut\u00e9ed with turbot fillet<\/strong>, leek and gurnard broth<\/strong>, square spaghetti<\/strong> with veraci clams<\/strong>, tomato and crispy bread, and pici<\/strong> with white rag\u00f9 of scottona beef<\/strong>, juniper berries and Maremma pecorino<\/strong> fondue.<\/p>

The main courses also range between land and sea: from grilled bluefin tuna<\/strong> with roasted eggplant quenelle and cacio e pepe cream<\/strong>, to porchetta-style rabbit loin<\/strong> with pancetta, fresh sausage and saut\u00e9ed spinach with Taggiasca olives<\/strong>, up to the unmissable Florentine steaks<\/strong> and pork tomahawk<\/strong>, cooked on the outdoor barbecue.<\/p>
