Il Sindaco Dario Nardella<\/strong> ha smosso, oggi, la curiosit\u00e0 pubblica nazionale e internazionale, dichiarando l\u2019intenzione <\/strong>del Comune di Firenze<\/strong>, in collaborazione con l\u2019Accademia della Fiorentina<\/strong> di far diventare la<\/strong> Bistecca alla Fiorentina patrimonio dell’umanit\u00e0<\/strong> e di avviare la procedura per l\u2019inserimento, comunicando tutto ci\u00f2 all\u2019ambasciatrice d\u2019Italia<\/strong> presso l\u2019Unesco<\/strong> a Parigi<\/strong>, Vincenza Lomonaco<\/strong>.<\/p>\n\n\n\n

Nardella ha dichiarato che: \u201cLa Bistecca alla Fiorentina<\/strong> prima ancora del fattore gastronomico, fa parte di un patrimonio culturale<\/strong> immateriale e con le sue regole ha diritto ad entrare, a pieno titolo, a far parte del nostro patrimonio culturale universale<\/strong><\/em>\u201d.<\/p>\n\n\n\n

La procedura non sar\u00e0 certamente facile ma forse nemmeno impossibile, come \u00e8 stato per la Pizza Napoletana<\/strong> a dicembre 2017, che finalmente ha ottenuto il suo meritato e prestigioso riconoscimento di patrimonio dell’umanit\u00e0<\/strong>, si pu\u00f2 tentare di far diventare tutto ci\u00f2 reale?<\/strong> <\/p>\n\n\n\n

Si parla di un prodotto diverso, cio\u00e8 di una bistecca che deriva da un animale, e si tratta di seguirne tutta la vita e l\u2019iter, che non \u00e8 un prodotto immateriale<\/strong>, e di tutta la filiera, dal produttore al consumatore finale. Tenendo conto soprattutto di come l\u2019animale viene nutrito, curato nel particolare, con cosa e per quale risultato. Tutto ci\u00f2 nella tutela e nel rispetto ultimo di tutti i professionisti che lavorano e per gli animali stessi, proprio per dare un prodotto certificato, garantito e di qualit\u00e0, attraverso un protocollo fatto di regole trasparenti.<\/p>\n\n\n\n

Perch\u00e9 la Bistecca alla Fiorentina \u00e8 si un simbolo<\/strong> di qualit\u00e0 e tradizione del territorio Fiorentino<\/strong> e di conseguenza toscano<\/strong>, e come tale, rispecchia quel principio principe del valore di una tradizione che ogni Nazione<\/strong> ha diritto di mantenere, trasmettere e tutelare, perch\u00e9 il cibo, come le opere d\u2019arti di ogni genere, come i paesaggi, fa parte integrante della vita planetaria, da conservare e trasmetterne la tradizione storica, per un cibo che ha diritto di essere rispettato senza contraffazione, ma \u00e8 pur vero che ci vuole un chiarimento a 360\u00b0, perch\u00e9 \u00e8 comunque un prodotto autoctono, ma la bistecca esiste in tutto il mondo, da secoli, altrimenti tutti i paesi potrebbero richiedere all’Unesco la stessa cosa, dunque dove sta la differenza per la nostra Bistecca<\/strong>?<\/p>\n\n\n\n

Il cibo<\/strong> non \u00e8 solo funzionale, alla sopravvivenza, pu\u00f2 essere opera d\u2019arte<\/strong> anch’esso se cucinato ad hoc, oppure inserito in canti poetici fatti da grandi poeti come ad esempio cita Dante Alghieri<\/strong> nella sua Divina Commedia:<\/p>\n\n\n\n

Mentre che piena di stupore e lieta<\/em>
l\u2019anima mia gustava di quel cibo<\/em>
che, saziando di s\u00e9, di s\u00e9 asseta<\/em>

Il cibo \u00e8 in oltre anche un canale di trasmissione culturale tra popoli diversi.
