Among the appetizers stand out the prawn ceviche with octopus, lime, cucumber and mint, the bluefin tuna tartare with green apple, caramelized onion, Puglian burrata and radish sauce, and the marinated black pig loin, served with carasau bread, tuna sauce and caper flower.
The first courses menu includes specialties such as Gragnano calamarata sautéed with turbot fillet, leek and gurnard broth, square spaghetti with veraci clams, tomato and crispy bread, and pici with white ragù of scottona beef, juniper berries and Maremma pecorino fondue.
The main courses also range between land and sea: from grilled bluefin tuna with roasted eggplant quenelle and cacio e pepe cream, to porchetta-style rabbit loin with pancetta, fresh sausage and sautéed spinach with Taggiasca olives, up to the unmissable Florentine steaks and pork tomahawk, cooked on the outdoor barbecue.
