The menu of Braciere Malatest a presents the best of the Tuscan tradition and the quality of the raw material is its strong point with meat selections.

The Florentine steak has the choice of 10 types of breeds, from Chianina, Angus, Piedmontese, queen of the Alps (Friesian breed) Irish, with different degrees of maturation, and obviously the brazier with hornbeam wood is one strengths.

 

Also excellent are the cured meats from the Renieri del Senese salami factory, or the Mugello cheeses from the Palagiaccio, which are served in the Toscanaccio appetizer on a wooden cutting board.

Do not miss the excellent first courses served with generous portions from a typical Tuscan trattoria or other dishes: the homemade Pici spread with a white Cinta Senese sauce with aromatic herbs, the creamed egg Spaghettino with crispy goose salami, the Pappardella with Artusian wild boar ragù, Leo’s Egg cooked at low temperature with crispy bacon on a tomato porridge, the selection of hamburgers, the Tuscan chicken marinated with herbs, cooked at low temperature and after grilling, the grilled fillet, or with a reduction of vin santo, Colonnata lard and pistachios.

The pizzas are cooked in a wood oven with wholemeal flour dough for at least 24 hours.
