Ciro in Florence is a refined restaurant overlooking the Arno River and the hills of Florence, born from the excellent renovation of the Hotel Columbus. The interiors are designed with meticulous attention to detail—the perfect setting where the tradition of Neapolitan cuisine meets Tuscan flavors, as the project stems from the successful experience of the Ciro da Santa Brigida restaurant in Naples.
Leading the kitchen is Mauro Forte, a highly skilled chef with experience in some of the finest hotel restaurants in Italy and former Executive Chef of Fiorentina. His attention to dishes begins with the selection of the best ingredients, chosen for their quality and freshness. The presentations are visually stunning, making Mauro Forte a true artist, but beyond their appearance, the dishes offer refined flavors in perfect balance, blending the two great culinary traditions—Tuscan and Neapolitan—with harmony.

MENU AT CIRO IN FLORENCE
From the menu, a few dishes stand out as true experiences. Among the starters, don’t miss the Tuna marinated in Tuscan Ancestral Vermouth “L’Originale” by Cantine Dainelli, served with julienned vegetables and ginger pearls; the Gazpacho with purple shrimp tartare and lemon vegetable charcoal sponge; and the Beef eye round with herbs, spices, and fresh truffle mousse (“Savini Selection”).
Among the first courses, the homemade lobster-filled fiocchi with its bisque and Savini truffle is highly recommended, as is the Gragnano pasta with guanciale, seasonal vegetables, and aged pecorino cream from “Il Palagiaccio” farm.
For the main courses, not to be missed are the Sous-vide cod fillet with pea cream and garlic crumbled taralli; the Sea bass fillet in pistachio crust with bell pepper cream, braised escarole, onions, and Taggiasca olives; the Golden seitan with sautéed baby spinach and red beet cream; and the Chicken supreme with fresh Savini truffle, mashed carrots, and toasted hazelnuts.
To finish on a sweet note, try the Mango and vanilla pod bavarois with strawberry jelly and lemon crumble, or the Lemon delight with a Sorrento-scented sauce.
