At Gunè, the bread and many of the pasta dishes are entirely handmade, honoring a tradition passed down through generations.
“The act of kneading is a simple gesture that conveys the pure essence of home, our roots, and our history,” Nicola explains.


Heritage and Hospitality

Having grown up surrounded by remarkable female cooks on a small family farm in the countryside of Basilicata, Nicola Langone always had the dream of opening a restaurant that honoured his heritage and flavours of Lucanian cuisine.

Shortly after coming of age, he moved from his rural home to Florence, a city that he immediately fell in love with and made his home.
Over time, he opened a bar-restaurant and a gelato shop near Piazza Duomo, but his greatest desire was to create a contemporary restaurant connected to his homeland and family roots.

In 2019, Gunè was born – a beautiful and inspiring tribute to women, especially the strong women in his family.
Nicola explains: “Gunè – from the Greek γυνή, meaning woman – is a tribute to the generative energy of the feminine: creativity, hospitality, intuition, the delicate strength that shapes and nourishes.”

Today, Gunè is considered one of Florence’s best-kept gourmet secrets.
